Each year after the brandy is finally boiled, the professional technologists immerse a silver cross in the containers to purify the drink to perfection and to give it a piece of the sanctity of the Christian relic.
As a prayer for God's blessing, the cross with which the Church each year on the day of St. Trifon Zarezan sanctifies the 20 thousand ares of the vineyards, is immersed into the brandy containers.
This wondrous method has been used for ages by the old brandy makers of Karnobat who have known the excellent properties of the silver metal.
It is the perfect natural way to eliminate residues in the most eco-friendly way and to give the brandy purity, rich taste and strong grape aroma.
Today, the greatest producer of wines and brandies uses the power of the precious metal in the form of special silver filters.
They are installed in the unique containers for boiling the brandy. Their design is exactly like the old brandy barrels are made for "Karnobat grape brandy" by the leading manufacturers.
The key to wonderful properties of the "Karnobat grape brandy” is the two unique local wine grape varieties Tamianka and Red Muscat.
The Tamianka grape variety has been grown for thousands of years in the lands of Karnobat. It gives the superior flavor of the brandy and enriches it with colorful tinges of box shrub, geranium, vanilla and clove. Before fermentation, the Tamianka grapes are left to stay with the skin for 24 hours as the best aromatic substances are extracted that way, the technologists tell.
The Red Muscat makes the taste strong and rich.
Today, the winery grows two local grape varieties on the most fertile vineyards on the southern slopes of the Karnobat area. The region is one of the few places in Bulgaria, where the rich soil and the mild climate create the perfect conditions for the vine growing for the production of brandies and wines.
Sanctified and purified with the silver cross, the brandy matures for months in the unique dogwood barrels that can only be seen in the cellars of the "Vinprom Karnobat".
Few people know that dogwood is best for ageing brandy of the Tamianka grape variety. Its wood enriches the distillate with flavors of vanilla, chocolate and coffee, which are beautifully combined with the colorful fragrances of the grape. The dogwood barrels are extremely valuable because only a dozen of the oldest Bulgarian craftsmen still know how to make a nice barrel from this wood famous for its strength and durability.
After the inauguration of the vineyards and the immersion of the silver cross into the brandy containers, the Executive Director of "Vinprom Karnobat" Desislava Nikolova and the mayor of the city Georgi Dimitrov trimmed the first vine stocks and poured wine on them for health and prosperity.
More than thousand guests came to trim the fertile vineyards of the Vinprom and later tasted the classic red wine CHATEAU KARNOBAT, in which the two favorite red varieties Cabernet Sauvignon and Merlot exquisitely blend.
The connoisseurs, raising toasts with this wine, predicted that this memorable wine would bring the next gold medals for Bulgaria at the prestigious exhibitions in London, Brussels, Paris and Vienna, where "Vinprom Karnobat" traditionally earns highest honors.
